Triscuit Pizza Bites!

 

I LOVE food.
And being pregnant just makes me love it even MORE!
Lately one of my favorite things to eat are
Triscuit Pizza Bites!

These are soooo simple and fast to make,
which is perfect for a quick lunch or snack!

They are super simple and SOOOO yummy!
Here’s what you need:

Cheese (graded)

Triscuits

Salsa (your favorite kind!)

Put the Triscuits on a microwave safe plate.
Add salsa on top then sprinkle some cheese on top!

Heat in the microwave for 45 seconds…
(this time may vary depending on your microwave)

Take them out and ENJOY!

Ooey Gooey Choc Chip Oatmeal Cookies {Recipe}

Recently I have been CRAVING chocolate chip cookies.
I decided to scour the internet for some “healthier” options
and after searching…
…and searching…

and searching, I finally threw in the towel and created my own recipe
using what little baking “know how” I have!

These were a HUGE hit in our house and I know will be a hit in yours too!

These Oooey Gooey Chocolate Chip Oatmeal Cookies
are soft on the inside with the perfect hardness on the outside!

Ingredients:

1 cup all purpose flour
1 tsp corn starch

1/2 tsp baking soda

1/2 tsp salt

2 tbsp unsalted butter at room temperature

1/2 cup sugar

1/2 cup brown sugar

1 egg

1/4 cut unsweetened apple sauce

1/2 tsp vanilla extract

2 cups oats (quick or old fashioned)

3/4 cup of chocolate chips (any kind you want!)

Now that you have the ingredients,

let’s whip up some cookies!

Preheat your oven to 350 degrees.

Line baking sheets with parchment paper.

Whisk together flour, corn starch, baking soda and salt in a bowl then set aside.

Using a mixer, mix the butter, sugar, brown sugar until well blended and creamy,
then add the egg, vanilla and applesauce.

Stir in the flour mixture in the bowl that you set aside by HAND then add the oats.

Get those hands dirty and blend the ingredients together SUPER well!

Add the chocolate chips!

Now it’s time to bake your cookies!

Drop the dough onto your baking sheet
(mine were about 1 tablespoon each),

then bake about 8-10 minutes until the edges of the cookies are LIGHT brown.

(You do NOT want to overcook the cookies!)

Keep these super yummy cookies on the counter in an air tight container!

(I bet they won’t be there for long!)

Cheese Steak Samich!

One of our favorite family meals at the moment is a
 Cheese Steak Samich…
 JIAD style that is!
You will need:
1 onion
1 green bell pepper
1 package of thin steaks
Cavender’s Seasoning
Worcestershire
Soy Sauce
Teriyaki Marinade
Provolone Cheese
Buns
Start out by cutting an onion, a green pepper and some thinly cut steaks into strips.

Over medium heat, add some olive oil in a pan then the steak. After the steak browns a little, add the onion and bell pepper.
Stir occasionally while the meat browns the onions and peppers cook down.

Sprinkle on some Cavender’s Seasoning to your taste!
Yummmy!

Then add a little soy sauce, Worcestershire and some Teriyaki marinade – to your taste!
After letting everything cook down, this is what it should look like:
Once everything is well cooked and the ingredients have thickened turn your oven onto broil. Spoon the meat mixture onto a bun (we use Arnold’s Sandwich Thins) and then top with provolone (or whatever cheese you want)!

Put in the oven and WATCH it.
As soon as the cheese melts, take it out….

…and you have a super yummy Cheese Steak Samich!

Plate with some Baked Broccoli and you have an awesome meal!

Green Apple Grilled Cheese.

Pretty much everyday for lunch I have been eating a Green Apple Grilled Cheese.
Yep.
And it is soooo good…
…sounds sooo gross, but it is soooooo delish – I’m serious!
I saw this on the Oprah (I think?) Show over a year ago and for some reason I  recently decided to try it.
Well, it has become the go-to lunch of Summer 2011.
Here is how I make it:
2 slices of Arnold’s Health Nut Bread (my fav!)
A thinly sliced Green Apple
Boar’s Head Provolone Cheese (you can pretty much use any cheese you want)
Make a sandwich.
Then melt some butter (or I Can’t Believe It’s Not Butter Spray – another fav of mine) over med – low heat in a frying pan and add your “samich” until the first side is done the flip it over until the cheese is melted and the second side is browned to your liking…
then….
EAT IT!

Baked Broccoli!

Kyle introduced us to the BEST side dish ever made with broccoli! 
Really, this is sooo yummy that even broccoli haters may change their minds!
The broccli is so crunchy and is almost “chip like!”
This recipe is super simple! Here is how it’s done:
Mix broccli florets in a bowl with olive oil and Cavender’s Seasoning (we use this on pretty much everything). Kyle says that Lemmon Pepper or just regular Salt and Pepper are great too!
Place broccoli one layer on a greased banking sheet (we use Olive Oil Spray) and bake at 400 degrees for about 20 minutes until brown and crunchy.

And enjoy!
UPDATE: This is NOT an April Fools joke! It is super yummy! PROMISE!

My two Favorite things…

to drink right now are…
a Protein Shake everyday for my mid morning snack:
And every afternoon while I am blogging / crafting I sip a mug full of Hot Honey Lemon Water (actually, I have one right here with me now!):

I know you all are dying to know how I make them so I’ll be a sweetie and share with you!
Protein Shake:
One Banana
Ice
1 Scoop Whey Protein Powder
Non-Fat Plain Greek Yogurt (I prefer Oikos or Fage)
Milled Flax seed
Strawberries
Water (to make it not sooo thick) – You could also use skim milk.
I don’t have time for measurements so I just throw the ingredients into my blender, turn that bad boy on and slowly sip and enjoy inhale my shake while running around, picking up after the Tasmanian Devil (aka Harper) or trying to make sure Cliff doesn’t ram his walker into every wall, door, piece of furniture in my house, or his sister… His favorite thing to do now it “crash” his walker into everything…
What were we talking about?!
Oh yea, the Hot Honey Lemon Water:
Very Hot Water
1 Tbsp of Honey
1 Lemon Wedge
Stir the honey and lemon into hot water and enjoy!
I actually do get to sip and enjoy this because I drink it during nap time! And it is sooo good!

Holy Guacamole!

I love, love LOVE avocados!
I like to eat avocado on pretty much anything. One of my favorite dips of all time is guacamole.
Here is how I make it:
I pretty much measure to taste and guess how much of each ingredient I want! So feel free to add as much or as little of anything. It’ll be fabulous anyway you make it!
1 Avocado, chopped
1 Tomato, chopped
1 Garlic Clove, crushed
1/4 Onion, finely chopped
2 tablespoons Fat Free Plain Greek Yogurt (secret ingredient!)
1/4 Jalapeno Pepper
1/2 Lime, squeeze juice
Mix together and serve with Pita Chips (I have a super yummie recipe I’ll share another day!), veggie crisps, vegetables, Tortilla Chips, Slap a tablespoon on a burger, or a turkey sandwich, or maybe put a dab on a spinach salad!
Or just eat it with a spoon (Yes, I did this the other night… Yuuuummmm!)! Anyway you eat it, it’ll be great!
Oh yea! And someone once told me that if you put the pit in the Guacamole, then it will not brown as fast!
